May 10th Weekly Menu

Enjoy plant based cooking and vegetarian food in Phoenix.

Many of you have shared with us that you take your jars to work for lunch. So we have been thinking how we can offer you something that fits this purpose ideally and we came up with our Seven Layer Salad. It is twice the size of our usual salads and should be a complete meal even for the hungriest among you. You can expect a good amount of greens supplemented with various veggies, seeds, nuts and legumes. The recipes will vary each week, but the combination will always provide all necessary macronutrients for a satisfying meal. Since we are packing quite a variety of ingredients into this one salad it wouldn’t fit in a small jar, or at least we think so. We’ll offer this large size salad for the next few weeks and see if it something you all like.

This week, we call it the Green, Crunchy and Sweet Salad. It has roasted sweet potatoes, quinoa, adzuki beans, cranberries, pecans, apples, red peppers, romaine and arugula. It comes with an herbed red wine vinegar dressing that has a nice dose of garlic as well.

Other menu items this week include Indian Rice (with saffron, cashews and sultanas, this dish almost qualifies as a dessert!), Veggie Millet Loaf (great side dish that adds tons of nutrition, best when fried in coconut oil), Mesir Wat (a slightly spicy red lentil stew) and other customer favorites like Tofu Basil Lasagna, Chocolate Cream Pie and Fried Celery Cutlets.
